Pasque
Pasque offers a refined cuisine that explores the riches of each season in an elevated dining experience, located on the ground floor of Populus. The menu features an array of fresh plant-based ingredients complemented by proteins from both land and sea. The restaurant gets its name from the Pasque wildflower, an early-blooming flower native to Colorado.
Stellar Jay
Stellar Jay offers a vibrant rooftop dining experience featuring live-fire cooking with shared plates amidst Colorado’s urban and mountain vistas. The nature-based menu honors ingredients cooked over the open flame and inspired by seasonal harvests. The name Stellar Jay is a playful nod to the charismatic bird, “Steller’s Jay”.
Guests can expect a rotating selection of fire-roasted dishes and thoughtfully crafted cocktails, all designed to highlight bold flavors and local ingredients.
Little Owl Coffee
In partnership with Little Owl Coffee, we’re bringing their expertly crafted coffee and dedication to Populus. From their café space above the lobby, guests can enjoy a perfect cup in a welcoming setting, reflecting the shared values of quality and community. It’s more than just coffee—it’s an opportunity to savor and connect in a space designed for creativity and comfort.
