Populus is home to two restaurants. Pasque is an elevated dining experience featuring a nature-based menu. On the rooftop, Stellar Jay is a live-fire cuisine with regionally-sourced ingredients.
Upon entering your room you’ll be greeted with a flood of natural light from Aspen-eye-shaped windows and views of Civic Center Park, Downtown Denver, and the Rocky Mountains on the horizon. Thoughtful touches fill the room with calming tones, pressed wildflowers, and hand thrown pottery.
